Black Bean and Corn Salsa

Enhance your salsa with fresh heirloom taste

Ingredients:

5-6 Medium Tomatoes, chopped  (we’ve used Black Krim, Kellogg’s Breakfast, and Cherokee Purple)

1 (15 oz) can of black beans, rinsed and drained

1 (15 oz) can of corn, rinsed and drained

1/2 medium red onion, finely chopped

1 tablespoon of red wine vinegar

2 teaspoons honey

3 cloves fresh garlic, minced

The juice of one lime, fresh

1/2 teaspoon ground coriander

1 teaspoon ground cumin

1/2 teaspoon chili powder  (I like Penzeys Medium Hot)

1/4 teaspoon salt

Fresh ground pepper (to taste)

3 fresh jalepenos, seeded (or more to taste)

2 tablespoons of fresh cilantro

Combine all ingredients in a medium-sized bowl, mixing well.  Enjoy!
